Easy Peasy Cauliflower Rice – Simple Thermomix Side

Cauliflower rice is an awesome alternative to regular rice and the Thermomix makes light work of it.

There are heaps of versions out there of how to do it. This is mine and I could eat it by the bowlful, it’s delicious!

It’s a three-step recipe, ready in just 15 minutes and will compliment any meal nicely. Below is how I served it today for my lunch.

One of my daughter’s had the same as me, another had her cauliflower rice with a couple of fried eggs and my eldest put it in a wrap with cheese and toasted it.

It can be eaten in so many different ways, but generally as an accompaniment, in place of regular rice.

The thing I love most about this cauliflower rice is that the Thermomix has it done and dusted in 15 minutes!

Ingredients Needed to make Cauliflower Rice in the Thermomix

Just a handful of ingredients are needed to make this simple side:

Cauliflower (of course!)

Garlic

Parsley (optional)

Ghee, Butter or Olive Oil

Salt and Pepper

Easy Peasy Cauliflower Rice

This simple side dish is quick to make and will finish off any meal nicely!

Ingredients

  • 450 g cauliflower florets
  • 20 g ghee or butter or olive oil
  • 15 g parsley (optional)
  • 1 garlic clove (5g)
  • a couple of pinches of each salt and pepper

Instructions

  • Place parsley and garlic in mixer bowl. Chop 7 seconds/speed 7/MC on. Scrape down bowl.
  • Add ghee. Cook 2 minutes/steaming temperature/speed1/MC off.
  • Add cauliflower, salt and pepper. Chop 10 seconds/reverse/speed 4/MC on. Cook 10 minutes/100/reverse/speed soft/MC on.

    Who would have thought that simply adding garlic and parsley would make such a big taste difference to cauli rice! I’ve now started doing that with my braised cabbage noodles as well and its great. The family will eat it now!
