Thermobexta’s Banana Pancakes

This is a light and fluffy pancake recipe and is sweetened with fruit.  If you are not planning on serving with a sweet sauce, you may like to add 1 tablespoon of honey to the ingredients.

1 medium banana, broken into 3-4 pieces
1 small-medium apple, quartered and cored
150g unbleached white spelt flour
2 tsp baking powder
125g milk of your choice (my cashew coconut milk is my preference)
1 egg
1/2-1 tsp vanilla powder
1 scant tsp cinnamon
coconut oil or butter, for frying
strawberry sauce or fast blueberry sauce or other toppings of your choice

 

1. Place apple and banana in mixer bowl. Chop for 3 seconds/speed 5/MC on.

2. Add all remaining ingredients. Combine for 20 seconds/speed 4/MC on.

3. Heat a large frying pan and melt in it some coconut oil. Spoon in tablespoonful amounts of pancake batter, cook for approximately one minute then turn when bubbles start to appear. Cook on both sides then place on a plate as they are cooked. Repeat until all batter has been used.

4. Enjoy with toppings of your choice, such as my strawberry sauce or fast blueberry sauce.

    I made two batches today for my boys:
    * The first I added 20g of Rice Malt Syrup – I wouldn’t say they were particularly sweet with that addition. They ate the lot – mostly plain, some with honey or maple syrup.
    * Due to the resounding success of the first batch, I made a second for lunchboxes. This time I added a small number dried cranberries with the flour and rest of the ingredients. Verdict = very tasty. It adds the little bit of sweetness and another fruit element.

    The banana wasn’t detected and the apple was a mere hint. The texture light, fluffy. They cooked beautifully and evenly. Love this recipe xx

    They were fine. Yes like you said. Not as fluffy. But I made quirky ones. I bet they would be better with your recipe with banana and apple :):) thank you !!

    what would happen if I only used wholemeal spelt flour? That is all i have 🙂
