Spinach and Corn Pikelets

These are a very tasty savoury pikelet.  I always have a batch in my freezer, ready to put into lunch boxes.  Though, normally only half the batch make it to the freezer as my kids absolutely love them!  You can make them without the spinach if your kids are allergic to green.

200g milk of your choice
60g baby spinach
2 eggs
30g spring onions, roughly chopped
1 garlic clove
1/2 tsp herbamare
1 tsp dulse flakes
280g corn kernels
120g unbleached white spelt flour
1.5 tsp baking powder
oil for frying

1. Place milk, spinach, eggs, onions, garlic, herbamare and dulse into mixer bowl. Blitz for 10 seconds/speed 6/MC on.

2. Add corn kernels, flour and baking powder. Combine for 5 seconds/speed 3/MC on.

3. Heat a large frying pan on low heat . Add a little oil. When oil is heated, drop in tablespoons of the batter and cook until brown on both sides.

4. If you want to freeze these for lunches, freeze on a tray (not touching).  When frozen, transfer to a large ziplock bag or a freezer container.  Place frozen pikelets into lunchboxes, they will defrost by morning tea time.

    Yum!! Didn’t have herbamere so used a spoon of odds n ends stock and mixed herbs. Also used frozen corn. So so good. Thanks for another winner.

    Sorry Bec.. one more question.. Just realised I only have frozen spinach. Can I use this and is it the same quantity? Sorry to be a pain.

      I’m actually not sure, I mean it will be possible but frozen spinach is very wet. Perhaps just put a bit in and fry one up, if it’s not right, add a bit more flour

    Hi Bec. If I don’t have herbamare or dulse flakes is there a substitute? Or can I just omit them.. I have everything else and I would love to have these for my lunch at work tomorrow! Thanks 😀

      The herbamare is a herb salt, so replace that with some vege stock paste or just some salt, plus maybe a bit of dried parsley. The dulse can just be left out. I hope you like them!

    Would these work without the egg do you think? Or substituting with egg replacer?

      You will need something in there to bind, I’ve never used egg replacer but if it acts similarly to egg then I’d suggest replacing with that

    Hiya!! I made these last night and honestly they really are the best corn fritters I have ever tasted!! I’m impressed with the flavour and texture – only thing I did do was add bacon to make up the quantity of corn (as didn’t have enough) and they were also loved by master 6!     Could you use chickpea flour instead? If so, would it be same amount?

      I haven’t tried these with besan but have made different fritters and pikelets with it. Have a google for the subbing ratio, it would prob be quite similar.
